Caramelized Shallot Dip ✨ it is seriously addicting, everytime I make it it is the first thing to go!

Ingredients
6shallots, thinly sliced
1yellow onion, thinly sliced
2tbspunsalted butter
1.5tbspbalsamic vinegar
1tbsptamari, or soy sauce
3tbspchives, more for topping
2tbspjapanese mayo
1/4cupsour cream
8ozcream cheese
1/2tspchipotle powder, more or less depending on desired heat level
1tspdried oregano
1/4tspnutmeg
1/3cupgruyere, grated
Salt and pepper , to taste
Instructions
First, add the onions and shallots to a preheated pan and sauté on medium for 5 minutes. Then, lower heat to medium low and caramelize for 45 minutes, mixing often.
Secondly, add in butter and pinch of salt. Keep caramelizing for another 15-20 minutes. Then, add in the balsamic and Tamari. Cook for 2-3 minutes. Let them cool for 15-20 minutes.
Add the cream cheese, sour cream, mayo, gruyere, chives, chipotle, oregano and nutmeg to the food processor. Then, process until smooth.
