Whipped Brie & Ricotta with Caramelized Vidalia Onions

The natural sweetness of Vidalia onions makes them perfect for caramelizing. Trust me, you’ll love them!

Ingredients 

  • 8 oz brie
  • 1/3 cup ricotta con latte
  • 1.5 tsp honey + more for drizzling
  • 2 Vidalia onions
  • 1/2 tbsp tamari
  • 1 tbsp balsamic vinegar
  • Pinch of salt
  • 1 tbsp butter
  • Chives to taste

Directions 

  • Slice the onions very thinly. Preheat a pan for 2 min on medium high. Add a tiny bit of olive oil and the onions. Lower heat to low
  • Let them caramelize for about 45-50 min, mixing them in between every little bit. I like adding 1 tbsp water once or twice in the process
  • Add in balsamic and tamari. Cook another 5 min. Turn heat off and add in the butter and salt
  • Remove the rind from the brie and cube
  • Add to a food processor with the ricotta and honey. Process until smooth, about 2-3 minutes
  • Spread on a plate, top with the onions, honey, and chives
