Twisted Caprese

Twisted Caprese? A while back I started sharing ways to twist classic dishes and this was my caprese rendition. I’ll say, it is SO good!

Ingredients 

  • 2 large heirloom tomatoes
  • 1/4 cup panko
  • 1/3 cup + 1 tbsp olive oil
  • 10 basil leaves, plus more for arranging on the tomatoes
  • 3 tbsp chives
  • 2 tbsp parmigiano
  • 1 lemon, zest
  • Seasoned salt to taste
  • 1 burrata ball

Directions 

  • In the tbsp of olive oil toast the panko until golden
  • Slice your tomatoes into rounds then in half
  • In a food processor add remaining oil, basil, parmigiano, chives, lemon zest and salt. Process until super smooth, about 2-3 minutes
  • Arrange the tomatoes on a plate with basil leaves. Drizzle some of the herby oil
  • Add burrata in the center with more herb oil and add panko to the tomatoes
