Spicy Salmon Cucumber Envelopes

My love for spicy salmon knows no bounds so here we are…


  • 6-8 oz sushi grade salmon
  • 1 cup sushi rice, give or take
  • 3-4 large cucumbers
  • Black and toasted sesame seeds
  • 1/4 c chives
  • 1/4 c japanese mayo
  • 3 tbsp sriracha
  • 1.5 tsp tamari
  • 1.5 tsp sesame oil
  • Avocado slices
  • Togarashi


  • 1 lemon
  • 1 lime
  • 2 green onions, chopped, white and green part
  • 1 large serrano, chopped
  • 1/4 c tamari


  • Chop the salmon pretty small, add to a bowl with the mayo, sriracha, chives, tamari and sesame oil. Mix well
  • Using a potato peeler, peel some ribbon looking strands out of the cucumber. Don’t use the seedy part, but save it for juice
  • Place 2 cucumber ribbons next to each other, overlapping. Then forming a cross at a little below the halfway point add 2 other ribbons of cucumber overlapping each other as seen on video
  • Add about 1 tbsp of sushi rice and 1-1.5 tbsp spicy salmon. Top with a cucumber slice. Start forming the envelopes as shown in the video
  • Top with sesame seeds and togarashi
  • Serve with the sauce
