Spicy Ramen & Poached Egg Yolk

Trust me, you have to try this, it is beyond easy + comforting!


  • 2 packages ramen, I used Momofuku soy scallion
  • 1/4 cup mayo
  • 2 tbsp chili crunch or salsa macha + more for topping, I like mine real spicy, feel free to adjust
  • 1 tbsp rice vinegar
  • 1 tsp cane sugar
  • 2 egg yolks


  • Mix together the mayo, chili crunch, rice vinegar, sugar and saucy seasoning packet from the ramen. Tip, if your ramen doesn’t have that, you can add in 1.5 tbsp soy sauce + 2 tsp sesame oil. Adjust to taste
  • Cook ramen to package instructions
  • Add it to the sauce with 1/4 cup ramen water
  • Poach the egg yolks in the simmering water for 15-30 sec max if you want them runny
  • Top the ramen with the yolks, more chili oil and the dry seasoning packet from the ramen. You can also add dry scallions
