I recommend using queso oaxaca but all I had was provolone and it worked!

Chipotle Shrimp Quesatacos

These are SO good and so easy!


  • 1 lb shrimp, peeled & deveined
  • 1.5 tbsp mayo
  • 1.5 tbsp smoked paprika
  • 1 tsp oregano
  • 1 tsp seasoned salt
  • 1/2 tsp coriander powder
  • 1 large garlic clove, minced
  • 1/2 yellow onion, finely chopped
  • 1/4 cup chipotle adobo
  • 1/2 lemon
  • 2.5 tbsp unsalted butter
  • 10-12 provolone slices
  • 10-12 street corn tortillas
  • Cilantro
  • Salsa of choice


  • Chop the shrimp pretty small, and pat dry
  • Add shrimp to a bowl with the mayo, paprika, oregano, coriander and seasoned salt. Mix well
  • Preheat a pan with a bit of olive oil on high for 2 min. Brown shrimp for 2 min. Remove from pan
  • Lower heat to medium low and add the onion and garlic. Cook until translucent. Add in chipotle adobo and cook for 2 minutes
  • Raise the fire to medium, add shrimp back in and cook together for 1-2 min. Turn heat off, squeeze the lemon and add the butter
  • Preheat another pan on high for 2 min, add the provolone followed by a tortilla and flip to get a golden cheese crust, add in shrimp and fold. Cook for 1-2 min per side or until slightly crispy
  • Serve with salsa and cilantro
