Ahi Wonton Tostadas, Ginger Gochujang Mayo & Fried Leeks

Ahi Wonton Tostadas, Ginger Gochujang Mayo & Fried Leeks.. So fresh and yummy!


  • 8 oz ahi tuna
  • 9 wonton wrappers
  • 1/3 cup + 2 tbsp japanese mayo
  • 2 tbsp gochujang
  • 1 tsp fresh ginger
  • 1 lime
  • 3 tbsp tamari
  • 1 tsp rice vinegar
  • 1.5 tsp sesame oil
  • 1 leek, washed and thinly sliced
  • Avocado slices
  • Sesame seeds
  • Scallions
  • 2-3 Mini cucumbers, thinly sliced
  • Jalapeno slices


  • Make an x on some wonton wrapper so they don’t puff up. Spray some avocado oil and bake at 350F for 8-10 minutes
  • Slice the leeks really thin, add to a pan and cover in avocado oil. Cook on high for 2 min and lower heat to medium low until golden. About 5-7 min. Let rest over a paper towel
  • Mix together the mayo, ginger, gochujang and a few drops of lime
  • Slice the ahi real thin and marinate in the remaining lime, tamari, sesame oil and rice vin for 2-3 minutes
  • Spread the mayo on the tostadas, add some cucumber slices, ahi, avocado, sesame seeds, fried leeks and jalapeno slice. Serve with more lime
